Quinoa Rice Salad with Tahini Dressing

Ingredients:

  • 1 cup quinoa (any colour)

  • 1/2 cup long grain brown rice

  • 1 cup chopped parsley

  • 1/2 diced capsicum

  • 1/2 cup chopped walnuts

  • 2 tbsp tahini

  • 1/2 cup olive oil

  • 2 tbsp apple cider vinegar

  • 1 tbsp honey or maple syrup

  • 1 tsp cumin powder

Method:

1. Cook the brown rice and quinoa until both are soft. 
2. While cooking, make up the dressing by mixing the tahini, olive oil, cumin, honey and apple cider vinegar together. Set aside. 
3. Drain and rinse the rice and quinoa mix, then stir through the dressing while still warm. 
4. Stir through the capsicum, walnuts and parsley. Refrigerate and serve cold.
