Honey-roasted Kumara, Orange, Walnut, Bacon and Rocket Salad

Ingredients:

  • 1 medium kumara (sweet potato) 

  • 1 orange

  • Handful of chopped walnuts

  • Handful of crispy bacon

Dressing: 

  • 1 tsp mustard

  • 1 tbsp honey

  • 1 tbsp olive oil

  • Juice of half a lemon

Method:

1. Roast kumara drizzled in honey and a touch of olive oil for approx. 25 minutes or until cooked. 
2. Cut orange into segments and fry bacon in pan till crispy. 
3. Combine all together with the walnuts and toss with lettuce/rocket. 
4. Sprinkle the dressing over salad and serve.
